how to uninstall the present printer driver, install the new driver?Sharing Printer On Another Computer

The computer I use in my digital darkroom is not hooked to the internet. I am trying to uninstall the present drivers for my epson R1900 printer and install the latest printer driver, icc paper profiles, etc. I downloaded the driver to a disc using this computer. When I try to uninstall the present printer driver using epson directions the whole printer is wiped off the computer. Can anyone tell me how to uninstall the present printer driver, install the new driver, etc? There is a driver installer available but I am not sure how to install that??? I am trying to transition from wet to digital darkroom, am an old guy and I am having problems.
