I have MagicScore Maestro, it's easy to use, has a clear and user-friendly interface. I use the virtual piano, it has also a guitar board. You can either connect a midi device to your computer, start playing, and it will record the notation, or place notes and then play back the sheet music. Of course, you can export you notes and print them.
