Proteins are very long chain molecules made up of amino acid building blocks. The protein chain is folded in a complex three dimensional shape known as its tertiary structure. The chain is held in this shape by interactions between different parts of the chain. Enzymes are classified according to the substances they act on. A specific enzyme will work on only one type of molecule.
