Hello over the past few days when using the Gmail Search Engine it is not pulling up everything.... And we use it as our sole way of finding receipts etc... Does anyone know if they have changed default settings or something.... I can't seem to find anything that needs to be changed back...

I haven't noticed any changes to GMail's search feature, and they haven't mentioned anything. Then again, if your search query contains special characters they may have changed something related to those. Does it pull up any results at all (just fewer than you were expecting), or absolutely nothing? Also, have you tried searching for the emails using different terms to see if they come up?
